Be the talk of the table when you roast a whole Gressingham Duck®. Just prick the skin and season, roast in the middle of the oven for the time shown (usually 20 minutes per 500g plus 20 minutes) then let the duck rest for 20 minutes. Resting the duck is really important, it helps retain the juices for a more succulent meat. Look at this video for the perfect way to carve your duck.
