Duck breast mini fillets

These skinless duck breast mini fillets are remarkably quick to cook and even healthier too - they have fewer calories and less than half the fat of a skinless chicken fillet (a skinless duck fillet has 92kcal and 1.3g of fat per 100g compared to a skinless chicken fillet that has 120kcal and 3.2g of fat per 100g). Skinless duck breast mini fillets cook in just five minutes and are perfect for an Asian stir-fry or a Cajun wrap with a difference.

Just prick the skin and season, roast in the middle of the oven for the time shown (usually 20 minutes per 500g plus 20 minutes) then let the duck rest for 20 minutes. Resting the duck is really important, it helps retain the juices for a more succulent meat. Look at this video for the perfect way to carve your duck. Depending on size a whole duck will serve 3 to 5 people.
